Chicken Baked on Mushroom Caps

(chicken breasts or turkey breasts can be used quantities for family)
6 large portobellos or l2 shiitake mushrooms
Season chicken or turkey breasts with l tsp dried thyme, slat & pepper, to taste

Lightly oil a l3x9 pan
Remove the stems from the mushrooms
Arrange mushrooms gill side down, overlapping, if necessary
Sprinkle with 1 tbsp minced garlic, salt & pepper.
Pour over mushrooms 2 cups dry white wine
Lay chicken breasts on top of mushrooms.  Brush lightly with olive oil.
Bake uncovered 20 mins.  If dry pan, increase wine
Baste with pan juices & turn chicken (turkey) over.  Bake l0-20 mins more
Sprinkle with parsley
