Mashed Butternut squash with Tarragon

l butternut squash
2 tsp dried tarragon
l/4 tsp salt
l/2 tsp freshly ground pepper

  Preheat oven 350.  Cover a large baking sheet with aluminum foil.  Cut the squash in half, remove the seeds, & place cut side down on the prepared baking sheet.  Bake until it's very soft--l hr.  Let cool 30 mins. fefore handling. Spoon the pulp out into a bowl. & mash well.  Stir in the seasonings.
Reheat before serving.
