Salmon With  Tomato and Basil

3 tbsp. olive oil
4 salmon steaks (8 oz. ea)
l cup coarsley chopped onion
l/4 cup water
l/4 tsp salt
2 cloves garlic minced
2 Tbsp fresh smippped basil leaves
2 cups fresh tomatoes,  peeled chopped
l/4 tsp ground pepper

  In a l0" skillet, heat oil over medium heat.  Add steaks.  Fry 2-4 mins. or until golden brown, turning once.. Remove steaks from skillet. Set aside.  To same skillet, add onions.  Cook l-2 mins. or until tender crisp.  Add garlic & basil & cook l min.  Stir in remaining ingredients. Arrange steaks over tomato mixture.  Lower heat to low.  Cover.  Simmer for ll-l3 mins, or until just beginning to flake./   (note:  ANY FISH STEAKS will do)
