Spaghetti Squash With Creamy Turkey


l spaghetti squash (2-3 lbs)
2 tbs olive oil
l/4 Cup finely chopped shallots
l lb. ground turkey
l/4 cup butter
l cup yogurt
l cup grated Parmesan cheese
l/2 groung nutmeg
l/2 cup dry white wine

  Pierce squash in several places with a fork.  Bake 350 .1-l/4 hr. (turn after 45 mins).  Keep warm.  About 20 mins before squash is done,. heat oil in a l0" - l2" frying pan.  Add shallots & cook stirring oftern ( l min).  Add turkey & cook stirring often (l5 Mins).  Add butter, water, yogurt, wine--stir to melt butter.  Lower heat to medium-low & simmer uncovered, stirring occasionally (l0 mins.)  Stir in cheese & mutmeg.  Cut squash in half, remove seeds.  Loosen strands with fork then scoop stands out into a platter.  Spoon sauce over squash.
